Our Story
Hai is a professionally trained pastry chef with a career spanning fine dining, large-scale production, and everything in between — from the Hilton's acclaimed Fish restaurant to leading pastry production at ICC Sydney for thousands of guests.
Her Vietnamese heritage gives her a natural instinct for flavour. French technique gives it structure. The result is pastry that doesn't just look beautiful — it tastes exactly as it should.
